Just off the top of my head, I think the longest book (or collection of books) I have actually read is the Protestant Canon Christian Bible. I read it every year. I have, just these past few days, been contemplating a change to my current reading plan.
The longest book I have attempted to read and thus far failed to complete is the four-volume Reformed Systematic Theology by Joel R. Beeke and Paul M. Smalley. Each individual volume is in excess of one thousand pages. I have not completed any of them. It can be dry reading, even when punctuated by exhilarating moments of theological clarity.
